Brian initially became interested in cooking without salt for health reasons. He soon discovered the taste benefits of salt free cooking. Brian runs cookery demonstrations regularly throughout the country
Our local food hero, Emmett initiated the Award Winning Irish Food Heritage Project in 2011 to capture and preserve the food history of the North West of Ireland and produced his new coffee table publication – Feast or Famine published by Guildhall Press – to promote and celebrate the regions world class culinary appeal.
Having trained in Culinary Arts at the prestigious Johnson and Wales University in Rhode Island, USA, Paula McIntyre returned to the UK in 1993 to open her own restaurant in Manchester. Since returning to Northern Ireland has worked as Head Chef in a number of establishments and is currently resident chef on BBC Radio Ulster. Paula is responsible for delivering regular recipe spots to a dedicated listenership on the Saturday magazine show. Paula, an advocate of locally produced food, does a fine job in introducing a wide range of culinary skills to members of the public.

Jenny is currently working on the final touches for her forthcoming series, in which she travelled to New England USA. She was able to identify incredible similarities in both traditions so look out for the feast of new recipes using cranberries, brambly apples, Irish pork, squashes, nuts and pumpkins along with many other foods.
Jean-Christophe Novelli is a 5 AA Rosette and Michelin award winning chef, who is also dubbed “the nation's favorite French Chef”. He began his exciting career at the age of fourteen as a baker in his home town of Arras, Northern France, before later arriving in Great Britain. Jean-Christophe is also a well-known TV chef having appeared on a wide variety of the UK's most popular cookery programs. He has also featured on an impressive selection of prime time TV shows. Jean's passion to pass on his wealth of culinary knowledge to others led to his desire to open his own cookery school; The Novelli Academy opened its doors on April 22nd 2005 and, within three months, was voted amongst the ‘Top 25 Cookery Schools in the World'.
Noel, executive head chef at the Lough Erne Resort in Fermanagh, who famously cooked for the world leaders at this year's G8 summit, has travelled the world, rubbed shoulders with celebrities and presidents and trained in the best kitchens with some of the most renowned chefs.
